Ingredients
- 300 g chicken
- 50 g kecap manis (keto)
- 3 cloves garlic
- 1 (juiced) lemongrass
- 50 g sambal
Method
- Combine the kecap manis (keto), lemongrass juice, and sambal in a bowl to create the marinade, then add the chicken and coat thoroughly, allowing it to marinate for at least 10 minutes of the prep time.
- Crush the garlic cloves and stir them into the marinade, ensuring the chicken absorbs all the aromatics before cooking.
- Preheat a grill or grill pan over medium-high heat, then place the marinated chicken pieces directly on the grates.
- Grill the chicken for approximately 10 to 12 minutes on the first side, basting frequently with the remaining marinade to build a lacquered, charred crust characteristic of ayam bakar.
- Flip the chicken and continue grilling for another 10 to 11 minutes, continuing to baste with the kecap manis (keto) and sambal mixture until the chicken is cooked through and slightly caramelized.
- Rest the chicken for 2 to 3 minutes off the heat before serving to allow the juices to redistribute.
