Ingredients
- 300 g beef
- 300 g coconut milk
- 1 tsp galangal
- 1 (juiced) lemongrass
- 1/2 tsp turmeric
Method
- Cut the beef into bite-sized cubes and set aside while you prepare the aromatics.
- In a large heavy-bottomed pan or wok, combine the coconut milk, galangal, lemongrass juice, and turmeric over medium-high heat and stir well to create the spiced cooking base.
- Add the beef cubes to the coconut milk mixture, ensuring all pieces are well coated with the spiced liquid.
- Bring the mixture to a boil, then reduce the heat to medium-low and simmer uncovered for approximately 30 minutes, stirring occasionally as the coconut milk begins to reduce and thicken.
- Continue cooking for the remaining 10 minutes, stirring more frequently as the liquid reduces further and the beef begins to caramelize and absorb the rich, thickened coconut sauce.
- Cook until the rendang reaches a deep golden-brown color with very little liquid remaining, ensuring the beef is tender and fully coated in the concentrated spiced coconut paste.
- Remove from heat and rest for 3 minutes before serving the rendang daging across 3 portions.
