Ingredients

  • 300 g sea bass
  • 200 g shrimp
  • 200 g mussels
  • 1 pinch saffron
  • 1 tsp fennel
  • 2 medium tomato

Method

  1. Chop the tomatoes into quarters and set aside.
  2. Heat olive oil in a large pot over medium-high heat and add the fennel, stirring for 1 minute until fragrant.
  3. Add the chopped tomatoes to the pot and simmer for 8 minutes, breaking them down slightly with a wooden spoon.
  4. Stir in the saffron pinch and pour in enough water to create a broth, then bring to a gentle simmer.
  5. Add the sea bass cut into chunks and the mussels, simmering for 8 minutes until the fish begins to cook through and mussels start to open.
  6. Add the shrimp and continue simmering for 4-5 minutes until the shrimp are pink and cooked through and all mussels have opened.
  7. Taste and adjust seasoning, then ladle the bouillabaisse into bowls and serve immediately.
