Ingredients
- 2 pieces (220 g each) bone-in pork chops
- 5 cloves garlic
- 80 ml white wine
- 2 pieces bay leaf
- 1 tsp smoked paprika
- 2 tbsp olive oil
- 1 (cut into wedges) lemon
Method
- Pound the crushed garlic with the smoked paprika and a pinch of coarse salt in a mortar until you have a fragrant paste.
- Smear the paste over both sides of the pork chops, lay them in a dish with the bay leaves, pour in the white wine, and marinate for 10 minutes.
- Lift the chops from the marinade, pat the surfaces dry, and reserve the marinade liquid for the pan sauce.
- Heat the olive oil in a heavy skillet over medium-high heat and sear the chops for 4 minutes on the first side until deeply browned.
- Flip the chops, add the reserved marinade and bay leaves to the pan, and cook for a further 5 minutes while basting with the bubbling liquor.
- Transfer the chops to plates, spoon the pan juices over the top, and serve with lemon wedges to squeeze on at the table.
