Ingredients
- 300 g chicken
- 1 (juiced) lemongrass
- 3 cloves garlic
- 1 tbsp coriander root
- 300 g fish sauce
- 2 pieces white pepper
Method
- Combine fish sauce, lemongrass juice, garlic, coriander root, and white pepper in a bowl to create the marinade.
- Add the chicken to the marinade, ensuring it is fully coated, and let it rest for at least 11 minutes to absorb the Thai flavors.
- Preheat a grill or grill pan to medium-high heat, around 200°C, while the chicken finishes marinating.
- Place the marinated chicken on the grill and cook for 8 minutes on the first side without moving it to develop proper char marks.
- Flip the chicken and grill for a further 8 minutes until cooked through with an internal temperature of 75°C.
- Rest the chicken for 2 minutes before serving to allow the juices to redistribute throughout the meat.
