Ingredients

  • 300 g chicken
  • 1 (juiced) lemongrass
  • 3 cloves garlic
  • 1 tbsp coriander root
  • 300 g fish sauce
  • 2 pieces white pepper

Method

  1. Combine fish sauce, lemongrass juice, garlic, coriander root, and white pepper in a bowl to create the marinade.
  2. Add the chicken to the marinade, ensuring it is fully coated, and let it rest for at least 11 minutes to absorb the Thai flavors.
  3. Preheat a grill or grill pan to medium-high heat, around 200°C, while the chicken finishes marinating.
  4. Place the marinated chicken on the grill and cook for 8 minutes on the first side without moving it to develop proper char marks.
  5. Flip the chicken and grill for a further 8 minutes until cooked through with an internal temperature of 75°C.
  6. Rest the chicken for 2 minutes before serving to allow the juices to redistribute throughout the meat.
