Ingredients

  • 300 g beef
  • 300 g coconut milk
  • 30 g peanuts
  • 1/2 tsp cinnamon
  • 1 tsp cardamom

Method

  1. Cut the beef into bite-sized chunks and pat dry to ensure proper browning.
  2. Heat a heavy-bottomed pot over medium-high heat and sear the beef chunks for approximately 4 minutes until browned on all sides.
  3. Reduce the heat to medium, pour in the coconut milk, and stir in the cinnamon and cardamom to bloom the spices into the liquid.
  4. Bring the curry to a gentle simmer, then reduce heat to low and cook uncovered for 30 minutes, stirring occasionally, until the beef is tender and the coconut milk sauce has thickened.
  5. Toast the peanuts in a dry skillet over medium heat for 3 to 5 minutes until golden and fragrant, then set aside.
  6. Ladle the Massaman curry into bowls and finish each serving with a scatter of toasted peanuts.
