Ingredients
- 300 g beef
- 300 g coconut milk
- 30 g peanuts
- 1/2 tsp cinnamon
- 1 tsp cardamom
Method
- Cut the beef into bite-sized chunks and pat dry to ensure proper browning.
- Heat a heavy-bottomed pot over medium-high heat and sear the beef chunks for approximately 4 minutes until browned on all sides.
- Reduce the heat to medium, pour in the coconut milk, and stir in the cinnamon and cardamom to bloom the spices into the liquid.
- Bring the curry to a gentle simmer, then reduce heat to low and cook uncovered for 30 minutes, stirring occasionally, until the beef is tender and the coconut milk sauce has thickened.
- Toast the peanuts in a dry skillet over medium heat for 3 to 5 minutes until golden and fragrant, then set aside.
- Ladle the Massaman curry into bowls and finish each serving with a scatter of toasted peanuts.
