Ingredients

  • 300 g pork belly
  • 2 tbsp soy sauce
  • 1 tbsp vinegar
  • 3 cloves garlic
  • 2 leaves bay leaf
  • 2 pieces black pepper

Method

  1. Combine soy sauce, vinegar, crushed garlic, bay leaves, and black pepper in a bowl, then add the pork belly pieces and marinate for at least 10 minutes.
  2. Transfer the pork belly along with all the marinade into a heavy pan or pot over medium-high heat and bring to a boil.
  3. Once boiling, reduce the heat to low, cover, and braise the pork belly in the adobo sauce for 30 minutes, turning the pieces halfway through.
  4. Remove the lid and increase the heat to medium, allowing the sauce to reduce and the pork belly to caramelize in the remaining liquid for about 14 minutes.
  5. Discard the bay leaves and black pepper pieces, then serve the pork belly adobo hot with the reduced sauce drizzled over the top.
