Ingredients
- 300 g pork belly
- 2 tbsp soy sauce
- 1 tbsp vinegar
- 3 cloves garlic
- 2 leaves bay leaf
- 2 pieces black pepper
Method
- Combine soy sauce, vinegar, crushed garlic, bay leaves, and black pepper in a bowl, then add the pork belly pieces and marinate for at least 10 minutes.
- Transfer the pork belly along with all the marinade into a heavy pan or pot over medium-high heat and bring to a boil.
- Once boiling, reduce the heat to low, cover, and braise the pork belly in the adobo sauce for 30 minutes, turning the pieces halfway through.
- Remove the lid and increase the heat to medium, allowing the sauce to reduce and the pork belly to caramelize in the remaining liquid for about 14 minutes.
- Discard the bay leaves and black pepper pieces, then serve the pork belly adobo hot with the reduced sauce drizzled over the top.
