Ingredients
- 200 g shrimp
- 2 pieces guajillo pepper
- 50 g chipotle
- 3 cloves garlic
- 2 medium tomato
- 1 piece lime
Method
- Remove the stems and seeds from the guajillo peppers, then toast them in a dry skillet over medium heat for about 2 minutes per side until fragrant.
- Transfer the toasted guajillo peppers to a blender along with the tomato, chipotle, and garlic, then blend until a smooth, deep-red diablo sauce forms.
- Pour the sauce into a skillet over medium-high heat and simmer for 15 minutes, stirring occasionally, until the sauce thickens and darkens in color.
- Pat the shrimp dry, season lightly, and add them to the simmering diablo sauce, cooking for 4 to 5 minutes until the shrimp are pink, curled, and fully coated.
- Squeeze the lime over the finished camarones a la diabla just before serving to brighten the bold, smoky flavors of the dish.
