Ingredients

  • 200 g shrimp
  • 2 pieces guajillo pepper
  • 50 g chipotle
  • 3 cloves garlic
  • 2 medium tomato
  • 1 piece lime

Method

  1. Remove the stems and seeds from the guajillo peppers, then toast them in a dry skillet over medium heat for about 2 minutes per side until fragrant.
  2. Transfer the toasted guajillo peppers to a blender along with the tomato, chipotle, and garlic, then blend until a smooth, deep-red diablo sauce forms.
  3. Pour the sauce into a skillet over medium-high heat and simmer for 15 minutes, stirring occasionally, until the sauce thickens and darkens in color.
  4. Pat the shrimp dry, season lightly, and add them to the simmering diablo sauce, cooking for 4 to 5 minutes until the shrimp are pink, curled, and fully coated.
  5. Squeeze the lime over the finished camarones a la diabla just before serving to brighten the bold, smoky flavors of the dish.
