Ingredients
- 150 g chicken skewers
- 2 tbsp peanut sauce
- 1/2 tsp turmeric
- 1 (juiced) lemongrass
- 150 g coconut
Method
- Combine turmeric and lemongrass juice in a bowl, then coat the chicken skewers thoroughly with the marinade and allow them to rest for 5 minutes.
- Preheat a grill or grill pan over high heat until it reaches a steady, intense temperature.
- Place the marinated chicken skewers on the grill and cook for 4 minutes on each side until the chicken is charred at the edges and fully cooked through.
- While the skewers rest, warm the peanut sauce in a small pan over low heat for 1 to 2 minutes, stirring until smooth and heated through.
- Arrange the grilled chicken skewers over a bed of coconut and serve immediately with the warm peanut sauce on the side for dipping.
