Ingredients

  • 300 g chicken
  • 300 g cauliflower rice
  • 1 tsp curry sauce
  • 150 g okra
  • 4 pieces eggs
  • 2 pieces pepper

Method

  1. Hard-boil the eggs in a pot of water for 10 minutes, then peel and set aside.
  2. Season the chicken with curry sauce and let it marinate for 10 minutes before cooking in a pan over medium-high heat for 18 minutes, turning occasionally, until cooked through and slightly charred.
  3. While the chicken cooks, stir-fry the cauliflower rice in a separate pan over medium heat for 8 minutes until tender and lightly golden, then season with pepper.
  4. In the same pan used for cauliflower rice, sauté the okra over medium heat for 8 minutes until just tender and slightly blistered.
  5. Slice the cooked chicken and halve the boiled eggs, then arrange everything over the cauliflower rice with the okra and pepper on the side to serve in the style of a traditional Nasi Kandar plate.
