Ingredients
- 300 g chicken
- 300 g cauliflower rice
- 1 tsp curry sauce
- 150 g okra
- 4 pieces eggs
- 2 pieces pepper
Method
- Hard-boil the eggs in a pot of water for 10 minutes, then peel and set aside.
- Season the chicken with curry sauce and let it marinate for 10 minutes before cooking in a pan over medium-high heat for 18 minutes, turning occasionally, until cooked through and slightly charred.
- While the chicken cooks, stir-fry the cauliflower rice in a separate pan over medium heat for 8 minutes until tender and lightly golden, then season with pepper.
- In the same pan used for cauliflower rice, sauté the okra over medium heat for 8 minutes until just tender and slightly blistered.
- Slice the cooked chicken and halve the boiled eggs, then arrange everything over the cauliflower rice with the okra and pepper on the side to serve in the style of a traditional Nasi Kandar plate.
