Ingredients

  • 50 g goat meat
  • 2 tbsp soy sauce
  • 1 tsp ginger
  • 3 cloves garlic
  • 1 (juiced) lemongrass

Method

  1. Combine soy sauce, ginger, garlic, and lemongrass juice in a bowl to create the marinade.
  2. Add the goat meat to the marinade, ensuring it is thoroughly coated, and allow it to marinate for at least 15 minutes of the prep time.
  3. Preheat a grill or grill pan to medium-high heat, approximately 200°C (400°F).
  4. Place the marinated goat meat onto the grill and cook for 13 minutes on the first side without moving it to develop proper char marks.
  5. Flip the goat meat and grill for the remaining 13 minutes until the meat is cooked through and caramelised on the outside.
  6. Rest the grilled goat meat for 3 minutes before serving to allow the juices to redistribute.
