Ingredients

  • 150 g duck confit
  • 1 cup mesclun greens
  • 80 g goat cheese
  • 30 g walnuts
  • 50 g vinaigrette

Method

  1. Gently warm the duck confit in a skillet over medium heat for 5 minutes until the skin is crispy and the meat is heated through.
  2. While the duck warms, divide the mesclun greens evenly among three serving plates.
  3. Remove the duck confit from heat, shred or quarter the meat, and distribute it among the three plates over the greens.
  4. Crumble the goat cheese and sprinkle it over each salad.
  5. Toast the walnuts in a dry pan over medium heat for 2-3 minutes until fragrant, then scatter them over the salads.
  6. Drizzle each plate with vinaigrette and serve immediately while the duck is still warm.
