- 1 cup mesclun greens
- 80 g goat cheese
- 30 g walnuts
- 50 g vinaigrette
Method
- Gently warm the duck confit in a skillet over medium heat for 5 minutes until the skin is crispy and the meat is heated through.
- While the duck warms, divide the mesclun greens evenly among three serving plates.
- Remove the duck confit from heat, shred or quarter the meat, and distribute it among the three plates over the greens.
- Crumble the goat cheese and sprinkle it over each salad.
- Toast the walnuts in a dry pan over medium heat for 2-3 minutes until fragrant, then scatter them over the salads.
