- 150 g chicken
- 1 tsp curry mayonnaise
- 30 g almonds
- 1 cup lettuce
Method
- Heat a skillet over medium-high heat and cook the chicken for 2 minutes until warmed through and lightly golden.
- Remove the cooked chicken from the skillet and let it rest for 1 minute, then slice or shred it into bite-sized pieces.
- Toast the almonds in a dry skillet over medium heat for 1-2 minutes, stirring frequently until fragrant, then set aside to cool slightly.
- Arrange the lettuce in a bowl or on a plate as the base of the salad.
- Toss the warm chicken pieces with the curry mayonnaise until evenly coated.
- Place the curried chicken on top of the lettuce and scatter the toasted almonds over the salad before serving.
