Ingredients

  • 150 g chicken
  • 1 tsp curry mayonnaise
  • 30 g almonds
  • 1 cup lettuce

Method

  1. Heat a skillet over medium-high heat and cook the chicken for 2 minutes until warmed through and lightly golden.
  2. Remove the cooked chicken from the skillet and let it rest for 1 minute, then slice or shred it into bite-sized pieces.
  3. Toast the almonds in a dry skillet over medium heat for 1-2 minutes, stirring frequently until fragrant, then set aside to cool slightly.
  4. Arrange the lettuce in a bowl or on a plate as the base of the salad.
  5. Toss the warm chicken pieces with the curry mayonnaise until evenly coated.
  6. Place the curried chicken on top of the lettuce and scatter the toasted almonds over the salad before serving.
