Ingredients
- 50 g crab
- 100 ml heavy cream
- 2 medium tomato paste
- 50 g cognac
- 2 tbsp butter
- 50 g cayenne
Method
- Melt the butter in a heavy-bottomed saucepan over medium heat until it begins to foam.
- Add the tomato paste and cayenne to the pan, stirring continuously for 2 minutes to develop a rich, concentrated base.
- Pour in the cognac and allow it to reduce for 3 minutes, scraping up any caramelized bits from the bottom of the pan.
- Add the crab to the pan and stir gently to coat it in the aromatic base for 2 minutes.
- Pour in the heavy cream, reduce the heat to low, and simmer the bisque uncovered for 10 minutes until it thickens to a velvety consistency.
- Ladle the bisque into warmed bowls and serve immediately.
