Ingredients

  • 50 g crab
  • 100 ml heavy cream
  • 2 medium tomato paste
  • 50 g cognac
  • 2 tbsp butter
  • 50 g cayenne

Method

  1. Melt the butter in a heavy-bottomed saucepan over medium heat until it begins to foam.
  2. Add the tomato paste and cayenne to the pan, stirring continuously for 2 minutes to develop a rich, concentrated base.
  3. Pour in the cognac and allow it to reduce for 3 minutes, scraping up any caramelized bits from the bottom of the pan.
  4. Add the crab to the pan and stir gently to coat it in the aromatic base for 2 minutes.
  5. Pour in the heavy cream, reduce the heat to low, and simmer the bisque uncovered for 10 minutes until it thickens to a velvety consistency.
  6. Ladle the bisque into warmed bowls and serve immediately.
