Ingredients

  • 150 g small fish
  • 30 g almond flour
  • 50 g cayenne
  • 1 (juiced) lemon
  • 1 tsp salt

Method

  1. Pour vegetable oil into a deep pan to a depth of about 5 cm and heat to 190°C over high heat.
  2. In a bowl, combine the almond flour, cayenne, and salt, mixing thoroughly to create an even seasoned coating.
  3. Toss the small fish in the almond flour mixture, ensuring each fish is fully and evenly coated.
  4. Working in batches, lower the coated fish into the hot oil and fry for 2 to 3 minutes per batch until golden and crisp.
  5. Remove the fish with a slotted spoon and drain on kitchen paper to remove excess oil.
  6. Squeeze the lemon juice over the devilled whitebait and serve immediately while hot and crisp.
