- 150 g small fish
- 30 g almond flour
- 50 g cayenne
- 1 (juiced) lemon
- 1 tsp salt
Method
- Pour vegetable oil into a deep pan to a depth of about 5 cm and heat to 190°C over high heat.
- In a bowl, combine the almond flour, cayenne, and salt, mixing thoroughly to create an even seasoned coating.
- Toss the small fish in the almond flour mixture, ensuring each fish is fully and evenly coated.
- Working in batches, lower the coated fish into the hot oil and fry for 2 to 3 minutes per batch until golden and crisp.
- Remove the fish with a slotted spoon and drain on kitchen paper to remove excess oil.
- Squeeze the lemon juice over the devilled whitebait and serve immediately while hot and crisp.
