Ingredients

  • 300 g pork liver
  • 1 small onion
  • 1 tsp sage
  • 30 g almond flour
  • 2 tbsp bone broth gravy

Method

  1. Finely mince the pork liver and onion together until you have a coarse, even mixture.
  2. Combine the minced mixture with sage and almond flour, mixing thoroughly until a firm, cohesive texture is achieved.
  3. Divide the mixture into 4 equal portions and shape each into a compact round ball with your hands.
  4. Place the faggots into a small baking dish and cook in an oven preheated to 190°C (375°F) for 24 minutes, until browned and cooked through.
  5. Warm the bone broth gravy in a small saucepan over low heat for the final 5 minutes of cooking, stirring until smooth and glossy.
  6. Serve the faggots immediately on warmed plates with the bone broth gravy poured generously over the top.
