Ingredients
- 50 g rabbit
- 100 ml heavy cream
- 150 g mushrooms
- 1 small onion
- 2 tbsp white wine
- 1 tsp thyme
Method
- Cut the rabbit into bite-sized pieces and pat dry with paper towels.
- Heat a large Dutch oven or heavy-bottomed pot over medium-high heat and sear the rabbit pieces until golden brown on all sides, approximately 8 minutes total.
- Add the white wine to deglaze the pot, scraping up any browned bits from the bottom with a wooden spoon.
- Slice the mushrooms and add them to the pot along with the thyme, then simmer covered for 25 minutes until the rabbit is tender.
- Stir in the heavy cream and continue simmering uncovered for 10 minutes until the sauce thickens slightly.
- Taste and adjust seasoning as needed before serving this classic French fricassée.
