Ingredients

  • 50 g rabbit
  • 100 ml heavy cream
  • 150 g mushrooms
  • 1 small onion
  • 2 tbsp white wine
  • 1 tsp thyme

Method

  1. Cut the rabbit into bite-sized pieces and pat dry with paper towels.
  2. Heat a large Dutch oven or heavy-bottomed pot over medium-high heat and sear the rabbit pieces until golden brown on all sides, approximately 8 minutes total.
  3. Add the white wine to deglaze the pot, scraping up any browned bits from the bottom with a wooden spoon.
  4. Slice the mushrooms and add them to the pot along with the thyme, then simmer covered for 25 minutes until the rabbit is tender.
  5. Stir in the heavy cream and continue simmering uncovered for 10 minutes until the sauce thickens slightly.
  6. Taste and adjust seasoning as needed before serving this classic French fricassée.
