Ingredients

  • 100 g ham steak
  • 4 pieces eggs
  • 2 tbsp mustard
  • 200 g spinach

Method

  1. Heat a large frying pan over medium-high heat until hot.
  2. Place the ham steak into the dry pan and cook for 3-4 minutes per side until nicely browned and heated through.
  3. Remove the ham steak from the pan and spread mustard evenly over the top.
  4. Crack the eggs into the same pan and fry to your preferred doneness, approximately 2-3 minutes for a runny yolk.
  5. While the eggs cook, arrange the fresh spinach as a bed on each serving plate.
  6. Slice the ham steak into portions and place on top of the spinach, then top each serving with a fried egg.
