Ingredients
- 100 g ham steak
- 4 pieces eggs
- 2 tbsp mustard
- 200 g spinach
Method
- Heat a large frying pan over medium-high heat until hot.
- Place the ham steak into the dry pan and cook for 3-4 minutes per side until nicely browned and heated through.
- Remove the ham steak from the pan and spread mustard evenly over the top.
- Crack the eggs into the same pan and fry to your preferred doneness, approximately 2-3 minutes for a runny yolk.
- While the eggs cook, arrange the fresh spinach as a bed on each serving plate.
- Slice the ham steak into portions and place on top of the spinach, then top each serving with a fried egg.
