- 300 g turnip greens
- 4 cloves garlic
- 3 tbsp olive oil
- 1/4 tsp chili flakes
- 1/2 (juiced) lemon
Method
- Strip the toughest stems from the turnip greens, give the leaves a quick rinse, and shake off the excess water without drying them completely.
- Smash the garlic cloves with the flat of a knife to crack them open without separating them into pieces.
- Warm the olive oil with the smashed garlic and chili flakes in a wide skillet over medium heat for 2 minutes until the garlic is golden and aromatic.
- Add the damp greens to the pan in two handfuls, tossing each addition through the oil until it begins to wilt before adding the next.
- Cook for 3 to 4 minutes total, until the greens are tender at the stems but still vibrant green at the leaves.
- Squeeze the lemon juice over the pan, toss once more to coat, and tip the greens onto a serving dish to accompany grilled meat or fish.
