Ingredients

  • 300 g turnip greens
  • 4 cloves garlic
  • 3 tbsp olive oil
  • 1/4 tsp chili flakes
  • 1/2 (juiced) lemon

Method

  1. Strip the toughest stems from the turnip greens, give the leaves a quick rinse, and shake off the excess water without drying them completely.
  2. Smash the garlic cloves with the flat of a knife to crack them open without separating them into pieces.
  3. Warm the olive oil with the smashed garlic and chili flakes in a wide skillet over medium heat for 2 minutes until the garlic is golden and aromatic.
  4. Add the damp greens to the pan in two handfuls, tossing each addition through the oil until it begins to wilt before adding the next.
  5. Cook for 3 to 4 minutes total, until the greens are tender at the stems but still vibrant green at the leaves.
  6. Squeeze the lemon juice over the pan, toss once more to coat, and tip the greens onto a serving dish to accompany grilled meat or fish.
