Ingredients
- 50 g john Dory
- 2 tbsp butter
- 1 (juiced) lemon
- 50 g capers
- 1 tbsp parsley
Method
- Preheat a grill or grill pan to medium-high heat, approximately 200°C, and allow it to heat thoroughly for about 5 minutes before cooking.
- Pat the John Dory dry and brush both sides generously with half of the butter to prevent sticking and promote even browning.
- Place the John Dory on the hot grill and cook for 10 to 12 minutes per side, turning once carefully, until the flesh is opaque and lightly charred at the edges.
- While the fish grills, melt the remaining butter in a small saucepan over low heat for 3 to 4 minutes, then stir in the lemon juice and capers to form a simple pan sauce.
- Remove the John Dory from the grill and allow it to rest for 2 minutes before transferring to a serving plate.
- Spoon the warm caper and lemon butter sauce over the grilled John Dory and finish with a scattering of freshly chopped parsley before serving.
