- 300 g whole chicken (spatchcocked)
- 1 (juiced) lemon
- 3 cloves garlic
- 1 tsp thyme
- 2 tbsp olive oil
Method
- Preheat your grill to high heat, around 220°C, ensuring the grates are clean and lightly oiled to prevent sticking.
- In a small bowl, combine the olive oil, lemon juice, crushed garlic, and thyme to create a marinade, then rub it thoroughly over both sides of the spatchcocked chicken.
- Place the chicken skin-side down on the hot grill and cook for 9 minutes until the skin is deeply charred and crisp.
- Flip the chicken and grill for a further 9 minutes on the bone side, ensuring the juices run clear and the internal temperature reaches 75°C at the thickest part of the thigh.
- Remove the chicken from the grill and allow it to rest for 5 minutes before carving into portions and serving.
