Ingredients

  • 50 g whiting
  • 30 g almond flour coating
  • 200 g fried zucchini
  • 2 tbsp tartare sauce
  • 1 (juiced) lemon

Method

  1. Preheat your oven to 200°C (400°F) and line a baking tray with parchment paper.
  2. Pat the whiting dry with a paper towel, then press the almond flour coating firmly onto all sides of the fish to form an even crust.
  3. Place the coated whiting on the prepared baking tray and bake for 20 to 24 minutes, or until the crust is golden and the fish flakes easily.
  4. While the fish bakes, arrange the fried zucchini on a separate oven-safe dish and warm them in the oven for the final 8 to 10 minutes of cooking time.
  5. Remove the whiting and zucchini from the oven and squeeze the juice of one lemon over the fish immediately.
  6. Serve the whiting alongside the fried zucchini with tartare sauce on the side for dipping.
