Ingredients
- 300 g lamb crown rack
- 2 pieces rosemary
- 3 cloves garlic
- 2 tbsp mustard
- 2 tbsp butter
Method
- Preheat the oven to 220°C (425°F) to ensure it reaches the correct temperature before the lamb goes in.
- Pat the lamb crown rack dry, then rub the mustard evenly over the entire surface of the rack to create a flavourful crust.
- Tuck the rosemary pieces between the bones of the crown and press the garlic cloves into the mustard coating around the rack.
- Melt the butter and brush it generously over the mustard-coated lamb to encourage a golden, caramelised exterior during roasting.
- Place the lamb crown rack upright in a roasting tin and roast in the preheated oven for 22 minutes for a pink, tender finish.
- Remove the roast from the oven and rest it for 5 minutes before carving between the bones to serve.
