Ingredients

  • 300 g lamb crown rack
  • 2 pieces rosemary
  • 3 cloves garlic
  • 2 tbsp mustard
  • 2 tbsp butter

Method

  1. Preheat the oven to 220°C (425°F) to ensure it reaches the correct temperature before the lamb goes in.
  2. Pat the lamb crown rack dry, then rub the mustard evenly over the entire surface of the rack to create a flavourful crust.
  3. Tuck the rosemary pieces between the bones of the crown and press the garlic cloves into the mustard coating around the rack.
  4. Melt the butter and brush it generously over the mustard-coated lamb to encourage a golden, caramelised exterior during roasting.
  5. Place the lamb crown rack upright in a roasting tin and roast in the preheated oven for 22 minutes for a pink, tender finish.
  6. Remove the roast from the oven and rest it for 5 minutes before carving between the bones to serve.
