Ingredients
- 300 g chicken
- 2 pieces piri piri pepper
- 3 cloves garlic
- 1 (juiced) lemon
- 2 tbsp olive oil
Method
- Combine the piri piri peppers, garlic, lemon juice, and olive oil in a blender and blitz into a smooth marinade.
- Score the chicken pieces deeply with a knife to allow the marinade to penetrate, then coat them thoroughly in the piri piri mixture.
- Cover the chicken and allow it to marinate for at least 12 minutes at room temperature so the flavours develop fully.
- Preheat a grill or heavy-bottomed skillet over medium-high heat until it is very hot before adding the chicken.
- Place the chicken onto the grill or skillet and cook for approximately 20 minutes on the first side until deep char marks form and the exterior is caramelised.
- Flip the chicken and continue cooking for a further 17 minutes until the juices run clear and the internal temperature reaches 75°C.
- Rest the chicken for 5 minutes before serving to allow the juices to redistribute throughout the meat.
