Ingredients

  • 300 g chicken
  • 2 pieces piri piri pepper
  • 3 cloves garlic
  • 1 (juiced) lemon
  • 2 tbsp olive oil

Method

  1. Combine the piri piri peppers, garlic, lemon juice, and olive oil in a blender and blitz into a smooth marinade.
  2. Score the chicken pieces deeply with a knife to allow the marinade to penetrate, then coat them thoroughly in the piri piri mixture.
  3. Cover the chicken and allow it to marinate for at least 12 minutes at room temperature so the flavours develop fully.
  4. Preheat a grill or heavy-bottomed skillet over medium-high heat until it is very hot before adding the chicken.
  5. Place the chicken onto the grill or skillet and cook for approximately 20 minutes on the first side until deep char marks form and the exterior is caramelised.
  6. Flip the chicken and continue cooking for a further 17 minutes until the juices run clear and the internal temperature reaches 75°C.
  7. Rest the chicken for 5 minutes before serving to allow the juices to redistribute throughout the meat.
