Ingredients
- 300 g lamb rack
- 2 tbsp Dijon mustard
- 3 cloves garlic
- 2 pieces rosemary
- 1 tsp thyme
Method
- Preheat the oven to 200°C (400°F) and allow it to reach full temperature while you prepare the lamb.
- Mince the garlic and strip the rosemary leaves from their stems, then combine them with the thyme to create a fragrant Provençal herb mixture.
- Pat the lamb rack dry and coat it generously on all sides with the Dijon mustard, then press the herb mixture firmly into the mustard to form an even crust.
- Sear the lamb rack in an oven-safe skillet over high heat for 3 minutes per side until a golden crust forms on the surface.
- Transfer the skillet to the preheated oven and roast the lamb rack for 20 minutes for a rosy medium doneness, or adjust by a few minutes to your preferred level.
- Remove the lamb rack from the oven and let it rest uncovered for 5 minutes before slicing between the bones and serving.
