Ingredients

  • 50 g goose
  • 1 tsp sage
  • 1 small onion
  • 2 tbsp goose fat
  • 1 tsp thyme

Method

  1. Preheat the oven to 200°C (400°F) to ensure it reaches the correct roasting temperature before the goose goes in.
  2. Rub the 50 g of goose with 2 tbsp of goose fat, then season generously with 1 tsp of sage and 1 tsp of thyme to build a flavourful crust.
  3. Place the prepared goose into a roasting tin and transfer it to the preheated oven.
  4. Roast for 41 minutes, basting the goose with the rendered goose fat from the tin halfway through cooking to keep the meat moist and promote an even golden finish.
  5. Remove the goose from the oven and allow it to rest for 5 minutes before serving to let the juices redistribute throughout the meat.
