Ingredients

  • 50 g woodcock
  • 100 g bacon
  • 2 tbsp butter
  • 2 pieces rosemary
  • 150 g mushrooms

Method

  1. Preheat the oven to 200°C (400°F) to prepare for roasting.
  2. Rub the woodcock all over with butter, then tuck the rosemary pieces inside the cavity and around the bird.
  3. Wrap the bacon rashers snugly around the woodcock to baste it during roasting and keep the meat moist.
  4. Place the woodcock on a roasting tray and roast in the preheated oven for 25 minutes, basting once halfway through with the rendered bacon fat.
  5. Meanwhile, sauté the mushrooms in any remaining butter over medium heat for 5 minutes until golden and tender.
  6. Remove the woodcock from the oven and allow it to rest for 5 minutes before serving alongside the sautéed mushrooms.
