Ingredients
- 50 g woodcock
- 100 g bacon
- 2 tbsp butter
- 2 pieces rosemary
- 150 g mushrooms
Method
- Preheat the oven to 200°C (400°F) to prepare for roasting.
- Rub the woodcock all over with butter, then tuck the rosemary pieces inside the cavity and around the bird.
- Wrap the bacon rashers snugly around the woodcock to baste it during roasting and keep the meat moist.
- Place the woodcock on a roasting tray and roast in the preheated oven for 25 minutes, basting once halfway through with the rendered bacon fat.
- Meanwhile, sauté the mushrooms in any remaining butter over medium heat for 5 minutes until golden and tender.
- Remove the woodcock from the oven and allow it to rest for 5 minutes before serving alongside the sautéed mushrooms.
