Ingredients

  • 50 g rabbit
  • 100 g bacon
  • 50 g juniper berries
  • 2 tbsp red wine
  • 2 pieces rosemary
  • 2 tbsp bone broth

Method

  1. Preheat the oven to 200°C (400°F) to prepare for roasting.
  2. Crush the juniper berries and press them firmly into the surface of the rabbit along with the rosemary sprigs to infuse the meat with their aromatic flavour.
  3. Wrap the bacon rashers tightly around the rabbit to baste it during roasting and keep the lean meat moist.
  4. Place the wrapped rabbit in a roasting tin, drizzle over the red wine and bone broth, then transfer to the preheated oven.
  5. Roast for 25 minutes, basting the rabbit with the pan juices halfway through cooking to build a rich, caramelised crust.
  6. Remove the roasting tin from the oven, allow the rabbit to rest for 5 minutes, then serve with the reduced pan juices spooned over.
