Ingredients
- 50 g rabbit
- 100 g bacon
- 50 g juniper berries
- 2 tbsp red wine
- 2 pieces rosemary
- 2 tbsp bone broth
Method
- Preheat the oven to 200°C (400°F) to prepare for roasting.
- Crush the juniper berries and press them firmly into the surface of the rabbit along with the rosemary sprigs to infuse the meat with their aromatic flavour.
- Wrap the bacon rashers tightly around the rabbit to baste it during roasting and keep the lean meat moist.
- Place the wrapped rabbit in a roasting tin, drizzle over the red wine and bone broth, then transfer to the preheated oven.
- Roast for 25 minutes, basting the rabbit with the pan juices halfway through cooking to build a rich, caramelised crust.
- Remove the roasting tin from the oven, allow the rabbit to rest for 5 minutes, then serve with the reduced pan juices spooned over.
