Ingredients

  • 50 g partridge
  • 100 g bacon
  • 2 tbsp butter
  • 1 tsp sage
  • 1 small onion
  • 2 tbsp bone broth

Method

  1. Preheat the oven to 200°C (400°F) and allow the partridge to rest at room temperature during the 13-minute prep time.
  2. Rub the partridge all over with butter and season generously with sage, ensuring the herb coats the skin evenly.
  3. Wrap the partridge with bacon rashers, securing them tightly around the breast and legs to baste the bird as it roasts.
  4. Place the bacon-wrapped partridge in a roasting tin, drizzle over the bone broth, and dot any remaining butter around the tin.
  5. Roast in the preheated oven for 35 minutes, basting occasionally with the pan juices to keep the bird moist and flavourful.
  6. Remove the partridge from the oven and allow it to rest for 5 minutes before serving, spooning the pan juices over the top.
