Ingredients

  • 300 g lamb loin
  • 3 cloves garlic
  • 2 tbsp mustard
  • 2 pieces rosemary
  • 1 tsp thyme
  • 2 tbsp butter

Method

  1. Preheat the oven to 220°C (425°F) and allow the lamb loin to rest at room temperature for 10 minutes before cooking.
  2. Crush the garlic cloves and combine them with the mustard, thyme, and softened butter to form a smooth herb paste.
  3. Strip the rosemary leaves and press them into the paste, then coat the lamb loin thoroughly on all sides with the mixture.
  4. Place the lamb loin in a roasting tin and roast in the preheated oven for 17 minutes for a pink, tender finish.
  5. Remove the lamb from the oven, tent loosely with foil, and allow it to rest for 5 minutes before slicing and serving.
