Ingredients
- 300 g lamb loin
- 3 cloves garlic
- 2 tbsp mustard
- 2 pieces rosemary
- 1 tsp thyme
- 2 tbsp butter
Method
- Preheat the oven to 220°C (425°F) and allow the lamb loin to rest at room temperature for 10 minutes before cooking.
- Crush the garlic cloves and combine them with the mustard, thyme, and softened butter to form a smooth herb paste.
- Strip the rosemary leaves and press them into the paste, then coat the lamb loin thoroughly on all sides with the mixture.
- Place the lamb loin in a roasting tin and roast in the preheated oven for 17 minutes for a pink, tender finish.
- Remove the lamb from the oven, tent loosely with foil, and allow it to rest for 5 minutes before slicing and serving.
