Ingredients

  • 50 g bone marrow
  • 1 tbsp parsley
  • 50 g shallots
  • 50 g capers
  • 1 (juiced) lemon
  • 1 tsp salt

Method

  1. Preheat the oven to 230°C (450°F) to ensure it reaches the high heat required for roasting bone marrow properly.
  2. Place the bone marrow cut-side up on a baking tray and season evenly with salt.
  3. Roast the bone marrow in the preheated oven for 10 minutes, until the marrow is soft, begins to bubble slightly, and pulls away from the bone.
  4. While the marrow roasts, finely chop the shallots and combine them in a small bowl with the capers, parsley, and freshly squeezed lemon juice to create a classic British gremolata-style relish.
  5. Remove the bone marrow from the oven and allow it to rest for 1 to 2 minutes before serving.
  6. Spoon the shallot, caper, parsley, and lemon relish directly over the roasted bone marrow and serve immediately.
