- 50 g bone marrow
- 1 tbsp parsley
- 50 g shallots
- 50 g capers
- 1 (juiced) lemon
- 1 tsp salt
Method
- Preheat the oven to 230°C (450°F) to ensure it reaches the high heat required for roasting bone marrow properly.
- Place the bone marrow cut-side up on a baking tray and season evenly with salt.
- Roast the bone marrow in the preheated oven for 10 minutes, until the marrow is soft, begins to bubble slightly, and pulls away from the bone.
- While the marrow roasts, finely chop the shallots and combine them in a small bowl with the capers, parsley, and freshly squeezed lemon juice to create a classic British gremolata-style relish.
- Remove the bone marrow from the oven and allow it to rest for 1 to 2 minutes before serving.
- Spoon the shallot, caper, parsley, and lemon relish directly over the roasted bone marrow and serve immediately.
