Ingredients
- 4 pieces hard-boiled eggs
- 150 g sausage meat
- 30 g almond flour
- 2 tbsp mustard
Method
- Peel the hard-boiled eggs and pat them dry with a paper towel.
- Mix the sausage meat with the mustard in a bowl until evenly combined.
- Divide the sausage meat mixture into 4 equal portions and flatten each portion into a thin patty, then wrap each patty firmly around a hard-boiled egg, ensuring there are no gaps.
- Roll each sausage-wrapped egg in almond flour until evenly coated on all sides.
- Heat oil in a deep pan or oven-safe dish to 190°C and cook the Scotch eggs for 11 minutes, turning occasionally, until the sausage meat is golden brown and cooked through.
- Transfer the Scotch eggs to a wire rack to rest for 2 minutes before serving.
