Ingredients

  • 150 g smoked trout
  • 100 g horseradish
  • 1 cup arugula
  • 50 g capers
  • 1 (juiced) lemon

Method

  1. Flake the 150 g of smoked trout into bite-sized pieces, checking carefully for any remaining bones and discarding them.
  2. Finely grate the 100 g of horseradish and squeeze the juice of 1 lemon into a small bowl, then whisk them together to create a sharp, tangy dressing.
  3. Place the 1 cup of arugula into a large salad bowl and scatter the 50 g of capers evenly over the leaves.
  4. Arrange the flaked smoked trout over the arugula and capers, distributing it evenly across the bowl.
  5. Drizzle the horseradish and lemon dressing over the entire salad and toss gently to coat all ingredients without bruising the arugula.
  6. Allow the dressed salad to rest for 7 minutes before serving so the flavours meld and the arugula softens slightly.
