Ingredients

  • 100 g sole fish
  • 2 tbsp butter
  • 1 (juiced) lemon
  • 1 tbsp parsley
  • 50 g capers

Method

  1. Pat the sole fish dry with paper towels and season lightly with salt and pepper.
  2. Heat 1 tablespoon of butter in a large skillet over medium-high heat until it foams.
  3. Place the sole in the hot skillet and cook for 4-5 minutes on the first side until golden, then carefully flip and cook for another 3-4 minutes until the flesh is opaque and flakes easily.
  4. Transfer the cooked sole to a serving plate and add the remaining tablespoon of butter to the skillet, swirling until it turns a light brown color.
  5. Stir the capers into the browned butter, then pour this beurre noisette over the sole fish.
  6. Finish the dish by squeezing fresh lemon juice over the top and garnishing generously with chopped parsley.
