Ingredients
- 100 g sole fish
- 2 tbsp butter
- 1 (juiced) lemon
- 1 tbsp parsley
- 50 g capers
Method
- Pat the sole fish dry with paper towels and season lightly with salt and pepper.
- Heat 1 tablespoon of butter in a large skillet over medium-high heat until it foams.
- Place the sole in the hot skillet and cook for 4-5 minutes on the first side until golden, then carefully flip and cook for another 3-4 minutes until the flesh is opaque and flakes easily.
- Transfer the cooked sole to a serving plate and add the remaining tablespoon of butter to the skillet, swirling until it turns a light brown color.
- Stir the capers into the browned butter, then pour this beurre noisette over the sole fish.
- Finish the dish by squeezing fresh lemon juice over the top and garnishing generously with chopped parsley.
