Ingredients
- 30 g almond flour
- 2 tbsp erythritol
- 2 tbsp butter
- 50 g vanilla custard
Method
- Preheat the oven to 180°C (350°F) and lightly grease a small baking dish or two individual ramekins with a little of the butter.
- Melt the remaining butter in a small saucepan over low heat, then remove from heat and allow to cool slightly.
- In a mixing bowl, combine the almond flour and erythritol, then pour in the melted butter and mix until a soft, cohesive dough forms.
- Divide the dough evenly between the prepared ramekins, pressing it down gently into an even layer.
- Bake in the preheated oven for 15 minutes, or until the tops are lightly golden and the edges are set.
- Remove from the oven and allow the puddings to cool for 2 minutes before turning out or serving directly in the ramekins.
- Spoon the vanilla custard over each warm pudding and serve immediately.
