Ingredients

  • 30 g almond flour
  • 2 tbsp erythritol
  • 2 tbsp butter
  • 50 g vanilla custard

Method

  1. Preheat the oven to 180°C (350°F) and lightly grease a small baking dish or two individual ramekins with a little of the butter.
  2. Melt the remaining butter in a small saucepan over low heat, then remove from heat and allow to cool slightly.
  3. In a mixing bowl, combine the almond flour and erythritol, then pour in the melted butter and mix until a soft, cohesive dough forms.
  4. Divide the dough evenly between the prepared ramekins, pressing it down gently into an even layer.
  5. Bake in the preheated oven for 15 minutes, or until the tops are lightly golden and the edges are set.
  6. Remove from the oven and allow the puddings to cool for 2 minutes before turning out or serving directly in the ramekins.
  7. Spoon the vanilla custard over each warm pudding and serve immediately.
