Ingredients
- 100 g sardines
- 4 pieces eggs
- 1 small onion
- 2 tbsp mustard
- 30 g almond flour dough
Method
- Preheat the oven to 200°C (390°F) and hard-boil 3 of the eggs for 10 minutes, then cool, peel, and slice them.
- Arrange the sardines in a shallow ovenproof dish so that their heads poke upward over the rim, as is traditional in a Stargazy Pie.
- Place the sliced hard-boiled eggs around the sardines in the dish and spread the mustard evenly over the filling.
- Roll out the almond flour dough on a lightly floured surface and drape it over the dish, cutting slits to allow the sardine heads to protrude through the pastry.
- Beat the remaining egg and brush it over the surface of the almond flour dough to create a golden glaze.
- Bake the pie in the preheated oven for 31 minutes, or until the pastry is firm and deep golden brown.
- Remove from the oven and allow to rest for 5 minutes before serving hot directly from the dish.
