Ingredients
- 300 g beef
- 50 g kidney
- 150 g mushrooms
- 1 small onion
- 30 g almond flour cover
- 2 tbsp bone broth
Method
- Cut the beef into 2cm cubes and the kidney into similar-sized pieces, then pat dry with paper towels.
- Slice the mushrooms into quarters and set aside.
- Heat a heavy-bottomed skillet over medium-high heat and brown the beef and kidney pieces in batches for 3-4 minutes per side until golden, then transfer to a plate.
- In the same skillet, sauté the mushrooms for 5 minutes until they release their moisture and begin to caramelize.
- Return the beef and kidney to the skillet, add the bone broth, and simmer for 8-10 minutes until the liquid reduces slightly and the meat is cooked through.
- Transfer the mixture to a baking dish, sprinkle the almond flour evenly over the top, and broil for 2-3 minutes until the almond flour coating is light golden and crispy.
