Ingredients

  • 300 g beef
  • 50 g kidney
  • 150 g mushrooms
  • 1 small onion
  • 30 g almond flour cover
  • 2 tbsp bone broth

Method

  1. Cut the beef into 2cm cubes and the kidney into similar-sized pieces, then pat dry with paper towels.
  2. Slice the mushrooms into quarters and set aside.
  3. Heat a heavy-bottomed skillet over medium-high heat and brown the beef and kidney pieces in batches for 3-4 minutes per side until golden, then transfer to a plate.
  4. In the same skillet, sauté the mushrooms for 5 minutes until they release their moisture and begin to caramelize.
  5. Return the beef and kidney to the skillet, add the bone broth, and simmer for 8-10 minutes until the liquid reduces slightly and the meat is cooked through.
  6. Transfer the mixture to a baking dish, sprinkle the almond flour evenly over the top, and broil for 2-3 minutes until the almond flour coating is light golden and crispy.
