Method
- Combine the beef rib meatballs with soy sauce and sesame seeds in a bowl, mixing thoroughly to coat the meat evenly, then let the mixture marinate for 10 minutes.
- Shape the marinated beef mixture firmly into flat, oval patties approximately 2 cm thick, pressing them together so they hold their form during cooking.
- Heat a grill pan or skillet over medium-high heat and place the patties in a single layer without overcrowding.
- Cook the tteokgalbi patties for 8 to 9 minutes on the first side until a deep caramelized crust forms, then flip and cook for another 7 to 8 minutes until cooked through and glossy.
- Transfer the patties to a serving plate, drizzle any remaining pan juices over the top, and finish with a sprinkle of sesame seeds before serving.
