  • 2 tbsp truffle oil
  • 1 (juiced) lemon

Method

  1. Slice the venison as thinly as possible using a sharp knife, aiming for near-translucent pieces, and arrange them in a single overlapping layer across a large chilled plate.
  2. Scatter the arugula evenly over the venison slices, distributing it across the entire surface of the plate.
  3. Use a vegetable peeler or fine grater to shave the Parmesan over the arugula and venison, covering the dish with generous curls or a light dusting.
  4. Drizzle the truffle oil uniformly over the assembled carpaccio, ensuring every portion receives an equal share of the 2 tablespoons.
  5. Squeeze the juice of the lemon over the entire plate just before serving to brighten the flavours and lightly dress the arugula.
