Ingredients
- 1 lb (450g) Ground lamb
- 2 oz (60g) Lamb tail fat or beef suet, minced
- 2 tbsp Aleppo pepper flakes
- 1/4 cup Red bell pepper, finely chopped
- 1/4 cup Onion, grated and squeezed dry
- 3 cloves Garlic, minced
- 1 tsp Cumin
- 1 tsp Salt
- 1 tsp Sumac (for serving)
Method
- Combine lamb, fat, pepper flakes, bell pepper, onion, garlic, cumin, and salt.
- Knead vigorously for 5 minutes until very sticky and well combined.
- Refrigerate 30 minutes. Shape onto flat metal skewers.
- Grill over high heat 3-4 minutes per side until charred.
- Serve with sumac-dusted onions and grilled peppers.
