Ingredients

  • 1 lb (450g) Ground lamb
  • 2 oz (60g) Lamb tail fat or beef suet, minced
  • 2 tbsp Aleppo pepper flakes
  • 1/4 cup Red bell pepper, finely chopped
  • 1/4 cup Onion, grated and squeezed dry
  • 3 cloves Garlic, minced
  • 1 tsp Cumin
  • 1 tsp Salt
  • 1 tsp Sumac (for serving)

Method

  1. Combine lamb, fat, pepper flakes, bell pepper, onion, garlic, cumin, and salt.
  2. Knead vigorously for 5 minutes until very sticky and well combined.
  3. Refrigerate 30 minutes. Shape onto flat metal skewers.
  4. Grill over high heat 3-4 minutes per side until charred.
  5. Serve with sumac-dusted onions and grilled peppers.
