Ingredients

  • 300 g lamb shoulder
  • 3 cloves garlic
  • 2 pieces rosemary
  • 2 tbsp olive oil
  • 2 medium tomato
  • 1 small onion

Method

  1. Preheat the oven to 200°C (400°F) and prepare a baking dish large enough to hold the lamb shoulder portions.
  2. Rub the lamb shoulder thoroughly with minced garlic, chopped rosemary, and olive oil, ensuring the seasoning coats all surfaces evenly.
  3. Slice the tomatoes and layer them across the bottom of the baking dish, then place the seasoned lamb shoulder on top.
  4. Finely slice the onion and scatter it over and around the lamb to build a fragrant base as it roasts.
  5. Transfer the baking dish to the preheated oven and bake for 10 minutes, or until the lamb is cooked through and lightly caramelized on the surface.
  6. Remove from the oven, allow the lamb to rest for 2 minutes, then slice or shred it and wrap portions tightly in your preferred keto-friendly wrap before serving.
