Ingredients
- 300 g lamb shoulder
- 3 cloves garlic
- 2 pieces rosemary
- 2 tbsp olive oil
- 2 medium tomato
- 1 small onion
Method
- Preheat the oven to 200°C (400°F) and prepare a baking dish large enough to hold the lamb shoulder portions.
- Rub the lamb shoulder thoroughly with minced garlic, chopped rosemary, and olive oil, ensuring the seasoning coats all surfaces evenly.
- Slice the tomatoes and layer them across the bottom of the baking dish, then place the seasoned lamb shoulder on top.
- Finely slice the onion and scatter it over and around the lamb to build a fragrant base as it roasts.
- Transfer the baking dish to the preheated oven and bake for 10 minutes, or until the lamb is cooked through and lightly caramelized on the surface.
- Remove from the oven, allow the lamb to rest for 2 minutes, then slice or shred it and wrap portions tightly in your preferred keto-friendly wrap before serving.
