Ingredients
- 50 g bonito
- 1 small onion
- 2 medium tomato
- 2 pieces pepper
- 2 tbsp olive oil
- 2 leaves bay leaf
- 1 (juiced) lemon
Method
- Preheat the oven to 200°C (390°F) and lightly grease a baking dish with 1 tablespoon of olive oil.
- Slice the tomatoes and peppers, then layer half of them across the bottom of the prepared baking dish along with the bay leaves.
- Place the bonito on top of the vegetable layer, drizzle with the remaining 1 tablespoon of olive oil, and squeeze the lemon juice evenly over the fish.
- Arrange the remaining tomato and pepper slices over the bonito to cover it completely.
- Transfer the dish to the preheated oven and bake for 18 minutes, until the fish is cooked through and the vegetables are tender.
- Remove the bay leaves before serving and plate the bonito with the roasted tomatoes and peppers alongside.
