Ingredients

  • 50 g bonito
  • 1 small onion
  • 2 medium tomato
  • 2 pieces pepper
  • 2 tbsp olive oil
  • 2 leaves bay leaf
  • 1 (juiced) lemon

Method

  1. Preheat the oven to 200°C (390°F) and lightly grease a baking dish with 1 tablespoon of olive oil.
  2. Slice the tomatoes and peppers, then layer half of them across the bottom of the prepared baking dish along with the bay leaves.
  3. Place the bonito on top of the vegetable layer, drizzle with the remaining 1 tablespoon of olive oil, and squeeze the lemon juice evenly over the fish.
  4. Arrange the remaining tomato and pepper slices over the bonito to cover it completely.
  5. Transfer the dish to the preheated oven and bake for 18 minutes, until the fish is cooked through and the vegetables are tender.
  6. Remove the bay leaves before serving and plate the bonito with the roasted tomatoes and peppers alongside.
