Ingredients
- 3 medium Tomatoes, finely diced
- 1 Green pepper, finely diced
- 1 small Red onion, finely diced
- 2 tbsp Walnuts, crushed
- 1 tbsp Tomato paste
- 1 tbsp Red pepper flakes
- 1 tbsp Pomegranate molasses (or lemon juice)
- 2 tbsp Olive oil
- 2 tbsp Fresh parsley
- to taste Salt
Method
- Finely dice all vegetables (the smaller the better).
- Mix everything together in a bowl.
- Add tomato paste, pepper flakes, pomegranate molasses, and olive oil.
- Stir in crushed walnuts and parsley.
- Season with salt. Let sit 15 minutes for flavors to meld.
- Serve with keto crackers or as a side to grilled meats.
