Ingredients

  • 3 medium Tomatoes, finely diced
  • 1 Green pepper, finely diced
  • 1 small Red onion, finely diced
  • 2 tbsp Walnuts, crushed
  • 1 tbsp Tomato paste
  • 1 tbsp Red pepper flakes
  • 1 tbsp Pomegranate molasses (or lemon juice)
  • 2 tbsp Olive oil
  • 2 tbsp Fresh parsley
  • to taste Salt

Method

  1. Finely dice all vegetables (the smaller the better).
  2. Mix everything together in a bowl.
  3. Add tomato paste, pepper flakes, pomegranate molasses, and olive oil.
  4. Stir in crushed walnuts and parsley.
  5. Season with salt. Let sit 15 minutes for flavors to meld.
  6. Serve with keto crackers or as a side to grilled meats.
