Ingredients

  • 1.5 lbs (680g) Ground lamb
  • 2 tbsp Lamb tail fat or butter
  • 2 tbsp Red pepper flakes (pul biber)
  • 1 tsp Cumin, ground
  • 1 tsp Sumac
  • 3 cloves Garlic, minced
  • 1 tsp Salt
  • 1 small Onion, grated and squeezed

Method

  1. Combine all ingredients in a bowl. Knead the mixture for 5 minutes until it becomes sticky and binds well.
  2. Refrigerate for at least 1 hour to firm up.
  3. Shape the meat around flat metal skewers, forming long oval shapes.
  4. Grill over high heat for 12-15 minutes, turning every 3-4 minutes.
  5. Serve with grilled peppers, tomatoes, and a squeeze of lemon.
