Ingredients

  • 1 lb (450g) Lamb cubes (leg or shoulder)
  • 2 large Eggplant
  • 1 cup Full-fat Greek yogurt
  • 3 cloves Garlic, minced
  • 2 tbsp Butter
  • 1 tsp Red pepper flakes
  • 2 tbsp Olive oil
  • to taste Salt and pepper

Method

  1. Char eggplants directly over a gas flame or under the broiler until skin is blackened and flesh is soft.
  2. Scoop out the smoky eggplant flesh and mash it.
  3. Mix mashed eggplant with yogurt, minced garlic, and salt.
  4. Season lamb cubes with salt and pepper. Sear in butter and olive oil over high heat.
  5. Reduce heat and cook until lamb is tender, about 15-20 minutes.
  6. Spread eggplant-yogurt mixture on plates, top with lamb.
  7. Drizzle with melted butter mixed with red pepper flakes.
