Ingredients
- 1 lb (450g) Lamb cubes (leg or shoulder)
- 2 large Eggplant
- 1 cup Full-fat Greek yogurt
- 3 cloves Garlic, minced
- 2 tbsp Butter
- 1 tsp Red pepper flakes
- 2 tbsp Olive oil
- to taste Salt and pepper
Method
- Char eggplants directly over a gas flame or under the broiler until skin is blackened and flesh is soft.
- Scoop out the smoky eggplant flesh and mash it.
- Mix mashed eggplant with yogurt, minced garlic, and salt.
- Season lamb cubes with salt and pepper. Sear in butter and olive oil over high heat.
- Reduce heat and cook until lamb is tender, about 15-20 minutes.
- Spread eggplant-yogurt mixture on plates, top with lamb.
- Drizzle with melted butter mixed with red pepper flakes.
