Ingredients

  • 2 cups (224g) Mozzarella cheese, shredded
  • 1 cup (112g) Almond flour
  • 2 oz (56g) Cream cheese
  • 2 large Eggs
  • 1 cup (150g) Feta cheese, crumbled
  • 1/2 cup Fresh parsley, chopped
  • 1 tbsp Sesame seeds
  • 1 egg + 1 tbsp water Egg wash

Method

  1. Preheat oven to 375°F (190°C).
  2. Melt mozzarella with cream cheese in the microwave. Mix in almond flour and 1 egg to form dough.
  3. Mix feta with parsley and remaining egg for the filling.
  4. Roll dough between parchment sheets into a large rectangle.
  5. Spread filling evenly, then roll up tightly like a log. Cut into 6 pieces.
  6. Arrange in a greased baking dish, brush with egg wash, sprinkle sesame seeds.
  7. Bake 20-25 minutes until golden brown.
