Ingredients
- 2 lbs (900g) Chicken thighs, sliced
- 2 tsp Cumin
- 1 tsp Turmeric
- 1 tsp Paprika
- 1/2 tsp Cinnamon
- 3 cups Cauliflower rice
- 3 tbsp Tahini
- 2 tbsp Lemon juice
- 1/2 Red onion, thinly sliced
- 2 tbsp Olive oil
- for garnish Fresh parsley
- to taste Salt
Method
- Mix cumin, turmeric, paprika, cinnamon, salt, and olive oil. Coat chicken.
- Cook chicken in a hot skillet 5-6 minutes per side.
- Sauté cauliflower rice until tender, 5 minutes.
- Mix tahini, lemon juice, and water for sauce.
- Serve chicken over cauliflower rice with tahini sauce, pickled onion, and parsley.
