Ingredients

  • 2 lbs (900g) Chicken thighs, sliced
  • 2 tsp Cumin
  • 1 tsp Turmeric
  • 1 tsp Paprika
  • 1/2 tsp Cinnamon
  • 3 cups Cauliflower rice
  • 3 tbsp Tahini
  • 2 tbsp Lemon juice
  • 1/2 Red onion, thinly sliced
  • 2 tbsp Olive oil
  • for garnish Fresh parsley
  • to taste Salt

Method

  1. Mix cumin, turmeric, paprika, cinnamon, salt, and olive oil. Coat chicken.
  2. Cook chicken in a hot skillet 5-6 minutes per side.
  3. Sauté cauliflower rice until tender, 5 minutes.
  4. Mix tahini, lemon juice, and water for sauce.
  5. Serve chicken over cauliflower rice with tahini sauce, pickled onion, and parsley.
