Ingredients

  • 1/2 head Cauliflower
  • 1 piece(s) Tomato, finely diced
  • 1/2 piece Cucumber, finely diced
  • 1 bunch Parsley, chopped
  • 3 stalk(s) Green onion
  • 2 tbsp Olive oil
  • 2 tbsp Lemon juice
  • 1 tbsp Pepper paste
  • to taste Salt, red pepper flakes, mint

Method

  1. Pulse cauliflower in a food processor until rice-grain sized.
  2. Finely chop tomato, cucumber, parsley and green onion.
  3. Make the dressing by mixing olive oil, lemon juice and pepper paste.
  4. Combine all ingredients in a large bowl.
  5. Season with salt, red pepper flakes and dried mint, refrigerate for at least 30 minutes.
