Ingredients
- 1/2 head Cauliflower
- 1 piece(s) Tomato, finely diced
- 1/2 piece Cucumber, finely diced
- 1 bunch Parsley, chopped
- 3 stalk(s) Green onion
- 2 tbsp Olive oil
- 2 tbsp Lemon juice
- 1 tbsp Pepper paste
- to taste Salt, red pepper flakes, mint
Method
- Pulse cauliflower in a food processor until rice-grain sized.
- Finely chop tomato, cucumber, parsley and green onion.
- Make the dressing by mixing olive oil, lemon juice and pepper paste.
- Combine all ingredients in a large bowl.
- Season with salt, red pepper flakes and dried mint, refrigerate for at least 30 minutes.
