Ingredients

  • 4 large Eggs
  • 1 cup Full-fat Greek yogurt
  • 2 cloves Garlic, minced
  • 2 tbsp Butter
  • 1 tsp Red pepper flakes
  • 1 tbsp White vinegar
  • for garnish Fresh dill or mint
  • to taste Salt

Method

  1. Mix yogurt with minced garlic and a pinch of salt. Divide between two bowls.
  2. Bring a pot of water to a gentle simmer, add vinegar.
  3. Poach eggs for 3-4 minutes until whites are set but yolks are runny.
  4. Place poached eggs on the yogurt beds.
  5. Melt butter in a small pan, add red pepper flakes, swirl for 30 seconds.
  6. Drizzle the spiced butter over the eggs. Garnish with dill or mint.
