Ingredients
- 4 large Eggs
- 1 cup Full-fat Greek yogurt
- 2 cloves Garlic, minced
- 2 tbsp Butter
- 1 tsp Red pepper flakes
- 1 tbsp White vinegar
- for garnish Fresh dill or mint
- to taste Salt
Method
- Mix yogurt with minced garlic and a pinch of salt. Divide between two bowls.
- Bring a pot of water to a gentle simmer, add vinegar.
- Poach eggs for 3-4 minutes until whites are set but yolks are runny.
- Place poached eggs on the yogurt beds.
- Melt butter in a small pan, add red pepper flakes, swirl for 30 seconds.
- Drizzle the spiced butter over the eggs. Garnish with dill or mint.
