Ingredients

  • 10 oz (280g) Fresh spinach
  • 3 large Eggs
  • 2 tbsp Butter
  • 1/2 small Onion, diced
  • 1 clove Garlic
  • 1/2 tsp Red pepper flakes
  • to taste Salt

Method

  1. Melt butter in a skillet. Sauté onion and garlic for 2 minutes.
  2. Add spinach and cook until wilted, about 3 minutes.
  3. Season with salt and red pepper flakes.
  4. Make wells in the spinach and crack eggs into them.
  5. Cover and cook 3-4 minutes until eggs are set.
  6. Serve straight from the pan.
