Ingredients
- 10 oz (280g) Fresh spinach
- 3 large Eggs
- 2 tbsp Butter
- 1/2 small Onion, diced
- 1 clove Garlic
- 1/2 tsp Red pepper flakes
- to taste Salt
Method
- Melt butter in a skillet. Sauté onion and garlic for 2 minutes.
- Add spinach and cook until wilted, about 3 minutes.
- Season with salt and red pepper flakes.
- Make wells in the spinach and crack eggs into them.
- Cover and cook 3-4 minutes until eggs are set.
- Serve straight from the pan.
